How to Cook Chicken Breast Wrapped in Bacon in the Oven
Succulent chicken breasts wrapped in savory bacon aren't the best choice for calorie-conscious diners or those trying to limit their fat intake, but it's just the thing if you're willing to allow yourself an occasional decadent treat. While the dish looks impressive, bacon-wrapped chicken breasts are simple to assemble and ready to eat in about an hour. The dish pairs well with a hot whole-wheat rolls and a healthy vegetable such as Brussels sprouts or broccoli.
Step 1
Preheat your oven to 400 degrees Fahrenheit.
Step 2
Place the chicken breasts on a cutting board or sturdy surface. Put the breasts between two pieces of plastic wrap or in a resealable plastic bag.

Use the flat side of a meat mallet or a hammer to flatten the breasts to a thickness of about 1/2 inch. Sprinkle the flattened breasts with salt and freshly ground black pepper.
Step 4
Place the end of a strip of bacon under each chicken breast, then wrap the bacon around the breast. Secure the bacon to the chicken with a toothpick. If you like extra bacon, wrap two pieces around each chicken breast. Don't stretch the bacon, as thinly stretched bacon is more likely to burn.

Drizzle about 1 teaspoon of fresh lemon or lime juice over the chicken breasts.

Coat a baking dish lightly with olive oil or nonstick cooking spray. Place the bacon-wrapped chicken breasts in the baking dish. Cook the breasts for about 40 minutes.
Step 7
Test the temperature of the chicken breasts with a meat thermometer. To be safe, the thermometer must register at least 170 degrees Fahrenheit. If the chicken isn't done, return the breasts to the oven for a few more minutes.

Add extra flavor by placing a garlic clove or a sprig of fresh thyme or parsley on top of the chicken breast before wrapping it with bacon. For chicken breasts with a crispy, golden brown coating, brown the bacon-wrapped breasts in hot oil for about 2 to 3 minutes per side. Transfer the browned breasts to a baking pan, drizzle with lemon or lime juice, and bake as directed.
